A childhood favorite of mine

The recipe I have shared with you today I have been eating since I was young girl. I recall the tangy smell of the vinegar and the smell of sauteed onions and garlic when I think of this recipe. We always had a lot of pasta dishes growing up while at my mom's house. One reason being that it was an affordable meal to feed us kids, and the second my brother and I played sports growing up, so we had pasta every night before we had a game. I would usually pick this recipe (the original version) as what I would want the night before a game. I recall it being a very simple no frills recipe, but I loved it none the less. I can picture my mother in the kitchen making this while she rocks out to Bon Jovi while drumming to the beat with a wooden spoon. I don't recall if she ever said where the recipe came from (could have been from my grandfather, he was the cook of the family), but I always associate this dish with my mom. She passed about a year and a half ago, but I know she approved of my version of her recipe, she was happy her grandkids liked it like I do.


When I introduced my family to this recipe it was initially met with mixed reviews. My hubby A thought there was too much of a vinegar taste to it, and the kids weren't quite sure what to make of it. Naturally, I had to make adjustments to the recipe to go with the tastes of my family. So, while the recipe I shared isn't the original, it still has the "bones" of the original. I ended up adding in beef stock and some Italian seasoning to it to lessen the harshness of the apple cider vinegar. While I', all for "making a recipe your own" while cooking, I can't stress enough that you shouldn't omit the apple cider vinegar from this recipe since it really tenderizes the meat.
