Happy Thanksgiving

As promised, this week's post will have two recipes that go with it. One recipe will be a dessert you can bring to Thanksgiving, and one will be what you can do with some of the leftovers (yes, there is that word so many people don't like). One of the things I look forward to about Thanksgiving is all the leftovers from that day (means we have time off from cooking for a few days). Don't get me wrong, I love all the cooking and having a fantastic holiday meal with our families, but I also love seeing how creative we can get with the leftovers. You could make a take on Chicken soup but with the leftover turkey, if you have ham leftovers you could make Ham & Navy Bean Soup for few examples. One recipe I'm sharing can utilize one of the dishes people are always left with too much of, mashed potatoes. My Baked Potato Soup recipe can be made with leftover mashed potatoes and some leftover ham too! Super easy to make and makes a great meal over the weekend. In the notes section of the recipe, I explain how to make it with leftovers, and yes, we have had it made both ways in our house.


The other recipe I'll be sharing this week is for a yummy dessert, Dutch Apple Pie. I made this the other week at our house because we had some apples that needed to be used before they went bad. I finally wrote down my recipe for it, which was a task in itself, as I usually "throw together" this dessert very easily and without measurements. It's a skill my first stepmother had, and I'm happy to say I inherited that trait. She could just go into the kitchen with a few ingredients and make a wonderful pie, I was always in awe when she did this. So that's how I always made my apple pie, just throwing things together that seemed like they would taste good. When it I went to make this pie last week, I had to pace myself and focus on writing down the recipe for it, because that's never how I've made it, paying attention to measurements and not just taste. Needless to say, I did end up writing the recipe down and it was taste tested and approved by the whole family. I know not everyone enjoys Pumpkin Pie during Thanksgiving, that's why I shared the Dutch Apple Pie recipe for a bit more variety. I hope you enjoyed this week's post and recipes.
