Sandwich spread, yeah or nay?

Over summertime there is nothing like a really well-made sandwich with an ice-cold glass of lemonade. Whether it's a sun butter & jelly (can't do peanut butter) or a deli meat sandwich it takes me back to being a kid over Summer. As a kid I enjoyed mayo & mustard on my deli style sandwiches, I still do actually, but I have branched out bit as an adult. 11 years ago, when I was pregnant with my youngest, I had a panini with a sun-dried tomato spread on it that I never forgot. It could have been the pregnancy hormones at the time (let's be honest) but that's when I realized that maybe sun-dried tomatoes do belong on a sandwich. Now, I haven't always been a fan of tomatoes when they are chunky (like salads, on tacos, and such) but I love tomato soup, pasta sauces, and of course pizza sauce. I'm weird, I know but it's a texture thing for me. Back to the sandwich spread, I think it's a must have, especially if it's a grilled sandwich. I was reminiscent of the "infamous" panini I had many years ago and wanted to try to create something that was similar to it. Surprisingly I think I nailed it on the first try, which doesn't always happen when I try to write new recipes. I'll admit, it's an incredibly easy recipe but so flavorful (can't wait to hear how you like it). Look in the recipe section for it.
